Did you know that fibre is just as important as the other food groups in maintaining good overall health? Despite this, currently only 9% of adults eat the recommended 30g of fibre daily.
If you’re looking to boost your fibre intakes, we’ve created some fibre-licious side dish recipes. All of these are a source of fibre, and can be combined to help fill up your plate with colour, texture and taste.

Colourful Chickpea Salad
Serves 6
Ingredients
- 1 tin chickpeas, in water
- 200g Birds Eye Supersweet Sweetcorn, cooked as per instructions and cooled
- 200g Birds Eye Garden Peas, cooked as per instructions and cooled
- ½ scotch bonnet chilli, washed and finely chopped
Method
- Drain the chickpeas and place in a bowl
- Add the sweetcorn, peas and scotch bonnet chilli
to the bowl and mix all together, adding a little seasoning, if needed

Crunchy Coleslaw
Serves 6
Ingredients
- 350g white cabbage, washed shredded
- 1 carrot, washed and grated
- 1 medium red onion, peeled and diced
- 1 tbsp parsley, washed and chopped
- 200g fat-free natural yogurt
- 1 tsp English mustard
Method
1. Place all ingredients in a bowl and mix together
2. Check the seasoning, and add a little pepper or more mustard, if needed
3. Serve with your favourite Goodfella's pizza and our Simple Fresh Salad
Sweet Potato Wedges
Serves 4
Ingredients
- 750g sweet potato
- 2 tbsp sunflower oil
- 1 tbsp paprika
- 1 tsp hot chilli powder
Method
- Pre-heat the oven to 200°C (fan)
- Wash and cut the sweet potatoes into wedges, leaving the skin on
- Put the wedges into a pan and cover with cold water, then bring to the boil and boil for 5-10 minutes until they start to soften
- Drain the wedges and put back in the empty pan
- Add the oil, paprika and chilli powder and toss to coat
- Place the coated wedges on a baking tray and put in the oven for 20-25 minutes

Fiery Hummus Dip for Crusts
Serves 4
Ingredients
- 1 tin chickpeas, in water
- 2 garlic cloves, peeled and roughly chopped
- ¼ scotch bonnet chilli, washed and roughly chopped
Method
- Drain the chickpeas and reserve some of the water
- Using a hand blender or food possessor, blend the drained chickpeas, the garlic and the chilli until smooth. Add a splash of the reserved chickpea water if it’s too thick
- Taste and check the seasoning, adding a little more chilli, if needed
- Serve with your favourite Goodfella's pizza and our Simple Fresh Salad
Spicy Bean Salad
Serves 4
Ingredients
- 2 tins mixed bean salad
- 1 tbsp sunflower oil
- ½ scotch bonnet chilli, washed
- 1 garlic clove, peeled and finely chopped
- 1 tbsp coriander, washed and chopped
Method
- Drain and rinse the mixed beans in a colander
- Heat a frying pan to a medium heat and add the oil
- Add the chilli and garlic to the pan and cook for 1 minute
- Add the beans and cook for 5 minutes until hot
- Remove from the heat and add the coriander
- Taste and season, if needed
- Serve with your favourite Goodfella's pizza and our Simple Fresh Salad
Garlic Corn
Serves 4
Ingredients
- 1 tbsp sunflower oil
- 3 garlic cloves, peeled and finely chopped
- 350g Birds Eye Supersweet Sweetcorn, cooked as per instructions and cooled
- 1 tbsp parsley, washed and chopped
- ½ tsp salt
Method
- Heat a frying pan and add the oil
- Fry the garlic and the sweetcorn for 5 minutes
- Add the parsley and the salt, mix well and continue cooking until piping hot.

Simple Fresh Side Salad
Serves 1
Ingredients
- A handful mixed salad leaves, washed
- 4 cucumber slices (wash cucumber before slicing)
- 4 cherry tomatoes, washed and halved
Method
- Mix the salad leaves, cucumber slices and cherry tomatoes together
- Add a dressing or seasoning, if desired
- Serve with your favourite Goodfella's pizza and your favourite pizza side
